Inside Scoop: The Menu for Oscar Night’s Biggest Party from Chef Wolfgang Puck

The Academy Awards® is Hollywood’s most glamorous evening — full of over-the-top fashion, inspiring acceptance speeches and stunning sets. But the fun doesn’t stop when the telecast ends. The Academy of Motion Picture Arts and Sciences’ official post-Oscars celebration, The Governor’s Ball, is the biggest party to cap an already-epic evening.

 

The Ball’s 1,500 invited guests will include Oscar winners and nominees, show presenters and more from the 90th anniversary awards show. For the 24th consecutive year, legendary chef Wolfgang Puck and the Wolfgang Puck Catering team will provide a creative menu for the creatives in attendance.

Chef Puck and his team will showcase more than 60 imaginative dishes, including guest favorites like miniature wagyu burgers with sharp cheddar and remoulade (seriously upgraded sliders), black truffle chicken pot pies (delectably elevated comfort food), spicy tuna tartare in sesame miso cones, and smoked salmon pizzas in the iconic Oscar statue shape.

 

In fact, partygoers look forward to these signature dishes so much that if the menu is altered, they often make special requests. The event’s 300 culinary staff are nimble enough to accommodate even the most specific inquiries. One year Barbra Streisand noted the absence of her favorite chicken pot pie and Wolfgang made one for her on the spot. Now the mainstay is always present!

In addition to fan-favorites, there will be new innovative and rare offerings like Miyazaki wagyu beef tartare on puffed black rice with togarashi (a Japanese spice). To qualify for the special designation of Miyazaki wagyu, the beef is judged on nine rigorous criteria including its marbling and tenderness and only a small percentage qualify. The melt-in-your-mouth wagyu will also be used in the famous mini burgers.

 

Another new dish is the Ruby chocolate strawberry and cream, which is a combination of strawberry-hibiscus mousse, strawberry compote, vanilla sponge, mascarpone cream and Callebaut Ruby chocolate.Wolfgang Puck Catering is the first company in the U.S. to have access to this new chocolate variety. Ruby chocolate will be making its American debut this year at the Governor’s Ball. Ruby chocolate derives its natural light pink color and sweet, slightly acidic, berry flavor from the 100% sustainable Ruby cocoa bean. The last new category of chocolate to be added to the old standbys of milk and dark was white chocolate some 80 years ago.

The menu will be served in a variety of ways—from an amuse-bouche platter to tray-passed hors d’oeuvres and passed small plates. There also will be a 2,600-pound, hand-carved ice station featuring made-to-order sushi and raw bar items. For an ending sweeter than an Oscar movie’s, an array of three-dozen exquisite desserts will be served plated or made-to-order at dessert action stations in the ballroom. Consider custom cinnamon sugar beignets topped with caramel or tailor-made Mocha Beehives which combine salted sable Breton (rich butter cookies) and a dark chocolate Rocher shell with liquid honey ganache and mocha mascarpone mousse. The pastry team also prepares 7,000 Oscar-shaped chocolates coated in edible gold dust so that everyone can take home an Oscar.

All of the delicious, meticulously-planned dishes are a culmination of months of preparation, meetings with The Academy, menu tests and multiple tastings. As for every Wolfgang Puck-catered event, the intricate fare is always restaurant-quality despite the large quantity being prepared.

The 90th Oscars will be held on Sunday, March 4, 2018 and will be televised live on the ABC television network at 6:30p.m. EST/3:30p.m. PST.
