Exceptional foods must come from exceptional sources. The mission at Blackbelly is that food will always start with seasonal, local Colorado- grown ingredients, and pasture raised, sustainable animals. In November 2014, award-winning Chef Hosea Rosenberg evolved his esteemed Boulder, CO catering business, with a food truck and farm, into a long awaited, brick-and-mortar restaurant. The eatery was quickly identified as a Boulder essential, and elite dining destination in Colorado. Its early accolades include “Best New Restaurant” and has been ranked among 5280 Magazine’s top 25 restaurants in each subsequent year. Blackbelly works closely with local ranchers, going steps further than simply receiving and butchering whole animals. The team contributes to research and development, feeding programs, and other conditions that ensure the final product maintains the highest standards of quality, with low quantity production. For its produce, Blackbelly primarily sources within a few miles of the restaurant. These farmers provide an amazing example of Colorado’s bounty, and what they cultivate directly effects the menu decisions the chefs makes on a regular basis.

- Do you offer catering options to accommodate special dietary needs?
- Yes! We can accommodate pretty much any dietary restrictions or allergies - vegan/vegetarian, gluten free, dairy free, keto, paleo, etc.
- Do you offer bar or liquor packages?
- Yes! We are a full service catering company that can provide bartending services and TIPS certified staff. We do not supply alcohol or ice, but we can provide mixer and N/A beverage packages.
- What are my options for food display and service?
- We offer plated, family style, buffet and stations for service options. Depending on the guest count, we can provide a variety of decor options for buffet, including chafing dishes, platters, risers or different levels to present the dishes. Inquire for more details!
- Do you offer tastings, and when would my tasting take place?
- We do offer tastings! Tastings are schedule Sundays through Wednesday at 4pm at the restaurant. If a deposit has not yet been made, tastings are $25 per person. Should you decide to book with Blackbelly, the tasting charge will be credited to your final bill.
- Will you bring your own catering equipment to my venue?
- Depending on the guest count and what the venue offers, we can bring certain equipment. It is possible that we will need to rent some kitchen equipment, such as an oven, speed rack, and prep tables. We provide you with all of those details upon inquiring with us!
