About Blue Box Bakery

Christina Kim Mathis, the owner and pastry chef of the restaurant, is originally from Seattle, but she went to Bozeman, Montana, to attend college and ski (but mainly ski.) After spending some time in the university system and having some success as a ski racer in the NCAA, she made the decision to pursue her passion and enroll in pastry school. In August of 2009, she and her two closest friends and roommates made the move from California to New York City by loading up a U-Haul with their belongings and driving across the nation. Christina is a graduate of The French Culinary Institute in New York City, which is now known as the International Culinary Center. While she was there, she graduated at the top of her class and learned from some of the most renowned chefs in the industry, including Jacques Torres and Ron Ben-Israel. She began her professional life working at Mayfield Bakery & Cafe in Palo Alto, California, then went on to work at The Ritz Carlton in Lake Tahoe and Half Moon Bay, California, respectively. Throughout the course of her career, she spent time at Bouchon Bakery and Jean George working as an intern, staging, and learning from some of the best chefs in the business. She has continued her education while operating her company by enrolling in classes and gaining knowledge from prominent figures in the field, such as Maggie Austin, in order to further enhance her method and abilities. She began Blue Box Bakery as a side project, baking cakes, cookies, and other goods for friends, family, and other customers to celebrate holidays, weddings, and other events of significance. She got married to her college love in 2015 and then relocated back to her hometown in Washington state, which is located just north of Seattle. After getting back to her house, she made the decision to devote her time entirely to the Blue Box Bakery. They welcomed their adorable baby James in 2018, who has brought a lot of joy and excitement into their life. They celebrate the arrival of their new son, Ryan, during the Christmas season in the year 2020. In addition to that, they have a rambunctious stray dog named Callebaut, who was given his name after a chocolate brand (since what self-respecting baker wouldn't name their pet after something sweet?).
