This almost often refers to seasonal produce, which, as a result, indicates that the foods in question are at their peak of quality and taste. The fact that we can eat properly because of the sacrifices made by those who raise local veggies and entire animals brings this home to us. When we carry out our work, we recognize the weight of that obligation, which we respect and carry with us.
