The groundswell began a year before the restaurant's February 2019 grand opening in Candler Park, Georgia. A series of pop-ups, hosted by chefs Ron Hsu and Aaron Phillips (Hsu was raised in Atlanta, and both were educated at Le Bernardin in New York City), helped them refine their menu, which rapidly sold out. The Biltmore Hotel, which opened its doors in 1924 and served as the center of Atlanta's business and social life for over sixty years. This magnificent landmark was created by the architecture company Shultze and Weaver, which is also responsible for such iconic hotels as The Breakers in Palm Beach, the Waldorf-Astoria in New York, The Pierre, and The Sherry Netherland in Amsterdam. It was formerly referred to as "The South's Supreme Hotel," but the Biltmore was forced to lock its doors in 1982 after a change in ownership and several years of continuous deterioration. When The Biltmore underwent a complete makeover in 1999, it was the result of sixteen years of neglect and abandonment.
