The Faurschou Foundation was established in 2011 by Mr. Faurschou after decades as gallery owner focusing on international contemporary art. Faurschou New York and Chef Refslund represent a perfect partnership, as they compliment each other’s stunning collections of inspirations. Terroir represents the sum of natural forces: soil condition, sun, wind, and rain. When we eat food that expresses terroir, we feel connected to a particular area of land and sea, and its unique characteristics, and by extension, to the people that live there, their struggles and sensibilities. Thus, Chef Refslund’s menus feature a naturalistic and hyperseasonal cuisine, with a clearly defined focus on vegetables indigenous to the region, seasonal bounty and honoring the Earth’s cycles.

Sadelle's is available for large party bookings and for full restaurant buyouts. With a full buyout, the restaurant can seat 80 guests for seated events and up to 200 guests for a cocktail-style reception. Sadelle's 3rd Floor dining room offers a more private experience for parties of up to 40 seated or 50 for cocktails, while our Communal Table is the perfect size for groups up to 16 guests.
