    We found a perfect cozy space at the end of an unused alley off the Bowery in the fall of 2004, and Freemans Restaurant was born. The restaurant's concept was to create a rough, secretive colonial American tavern. Early Americans imagined the cuisine to be simple, rustic, and inspired by Old World traditions. It was founded in 1938 by the saxophonist Henry Minton (from whom the establishment took its name), and over the next decade, Minton's Playhouse became the scene of a revolutionary shift in jazz performance. Minton's Playhouse is regarded as a pivotal location in the history of jazz in New York City.
