  Bateau, french for “boat,” is both a nod to our first restaurant, Boat Street Café, as well as an attempt to reimagine the American steak house around quality, sustainability and animal welfare. With the name About Bateau, which comes from the French word for "boat," we're paying homage to our first restaurant, Boat Street Café, while also attempting to reimagine the American steakhouse in the context of quality, sustainability, and animal welfare. Traditional cattle breeds, renowned for their flavor, are the centerpiece of Bateau's whole animal menu. These cattle breeds are selected and owned by Bateau and cared for by Pure Country, a Food Alliance certified ranch located in Moses Lake, Washington. All of our cows are raised in a humane manner, fed only grass, and, most importantly, finished only on pasture. Bateau's beef is dry aged for a minimum of 21 days before being butchered on site by Scott Johnson, the butcher for the restaurant. This is certainly not the quickest, easiest, or most cost-effective method of preparing beef, but we believe it is the most effective. Along with Chef Taylor Thornhill's inventive dishes, which frequently include foraged and fermented ingredients, specialty cuts are sold by the pound or by the quantity of meat available. In addition to steakhouse classics done right, such as twice-fried frites and buttery mashed potatoes, the menu includes iconic cocktails and an extensive bottle list. The service is warm and welcoming while also being refined. Many of the fixtures and furniture pieces from Boat Street Café have been repurposed in the dining room as a nod to the former location. The rough slate tables, which are now decades old, as well as the 'Jeffry' chalk drawing by artist Curtis Steiner, will be familiar to visitors.   Swantown Inn is an 1887 Queen Anne/Eastlake Victorian Mansion in Olympia, Washington. It's listed on both the city and state historical registers. Built in 2018, the ballroom echoes the mansion's historic character while adding chandeliers, a bar area serving espresso and baked goods, AV capabilities, and Wi-Fi. Four guest rooms with king beds and private bathrooms round out the property, along with the apartment-style Puget Suite, which sleeps up to six across two bedrooms.

The Gazebo Garden serves as the outdoor ceremony setting, framed by the property's garden landscaping, while the Grand Room stands ready indoors during inclement weather and doubles as overflow space for larger dinners. The building's character comes from its restoration: massive end-to-end wooden trusses held tight with steel brackets rise above an open floor of island fir.   Warm Springs Inn & Winery traces its roots to 2006, when the Szmania family purchased a 20-acre farm and pear orchard along the Wenatchee River. Two years later they planted rows of Sangiovese, Syrah, and Merlot, and by 2012 had brought in their first harvest, with early vintages made under the guidance of winemaker John Patterson at Patterson Cellars in Woodinville. In 2013, the family expanded into hospitality, purchasing the historic 9,000-square-foot mansion on the property's 10 riverfront acres and reopening it as an inn in April 2014. Today, BCV wines are produced in small batches on-site in Wenatchee, from harvest through crush, fermentation, and bottling — eight wines in all, including Merlot, Syrah, Sangiovese, Cabernet Franc blends, and a Rubi Reserve Port, several of which have won medals at the North Central Washington Wine Awards.   Red Barn Farms occupies a working century farm in the Palouse region of southeastern Washington, twelve miles south of Pullman. Established in 1901 by Christine and Florent Meyer, the property has passed through four generations of the same family; current stewards Ty and Kay Meyer converted the farm into an event venue in 2007. The centerpiece is the original barn, its timber frame built from fir harvested on nearby Moscow Mountain more than a century ago. Renovations added a new floor and foundation, repaired the original joists, and introduced lighting and indoor restrooms, while leaving the timber framing and barn wood exposed throughout the reception space. Cafe lights and lanterns hang overhead, and the barn's doors open onto a covered front patio that doubles as a second dance floor. Guests move from a terraced ceremony area overlooking the rolling hills, entered through the barn's grand double doors, into the barn itself for dinner and dancing, with an adjacent courtyard and patio extending the layout for cocktail hour, yard games, and larger gatherings. Four acres of landscaped grounds, including lavender and wheat fields, surround the buildings, and a separate structure called The Suites provides wedding-party preparation space, a kitchen, and meeting rooms.

Tim and Tracy Stocker's children represent the farm's sixth generation of Stockers. When the dairy industry did not appear to be promising, the family began to cultivate sod, often known as turf, years ago. This business was a success, but it left the family with idle barns and undeveloped land. Hidden Meadows arose from the old barns that formerly housed hundreds of dairy cows to the unique events venue it is today, thanks to Tracy Stocker's architectural vision, the cooperation and support of family and friends, and countless hours given to building.
