Its capacity was needed to serve Chicago's great volume of postal business, inflated by the mail-order businesses of Montgomery, Ward, and Sears. In 2015, Finney was promoted to lead line cook at Sociale, and afterwards to Sous Chef at Gather, where he worked under highly regarded Chef Ken Carter.
