Our first kitchen, in Davis Square, Somerville, MA, opened in 1981 with handcrafted menu items inspired by family recipes and a brick oven at its heart. We created unique pizzas and pastas, as well as a tradition, using only the freshest ingredients and perfecting the skill of brick oven cooking in front of the visitors we served. From New England to Virginia, Bertucci's restaurants are now blazing up brick ovens, each expressing the passion for authentic Italian cooking as well as the particular character and charm of each local region. Our kitchen is still open, our dishes are still created to order, and our hospitality is still first and foremost, giving you a family dining experience you won't find – or taste – anywhere else. Joey Crugnale, a young entrepreneur and ice cream shop owner, was inspired by a visit to his grandmother's house in Italy to create the first Bertucci's Brick Oven Pizzeria in Davis Square, Somerville, MA. The original Bertucci's became a popular neighborhood institution, reproducing the family experience Joey fell in love with in his grandmother's kitchen, complete with a custom crafted brick oven in the center and a bocce court in the basement. The restaurant's trademark pizzas were made with only the freshest ingredients, and many of them are still available today. What makes brick oven cooking so unique? Everything, in a nutshell. The extreme heat of our ovens doesn't just lock in freshness, with cooking temperatures reaching 675 degrees and a radiant flame from the oven floor reaching 1150 degrees. It brings out the inherent Italian flavors in our pizzas, pastas, veggies, and seafood, giving each dish a distinct flavor.
