He made the decision to pursue a profession in cooking at the age of 18. For more than ten years, Chef Jean worked at some of Paris's top eateries, including LES Quatre Saisons, The Sir Winston Churchill, LE Ritz, Le Café La Jatte, and many more. His mother, a native of Haiti, gave birth to his passion for food and desire to make others happy via food through her home cooking, which mixed French and Creole cuisine.
