Utilizing food that is both locally sourced and produced in a sustainable manner is fundamental to our philosophy. Because they always provide the freshest ingredients, the local farmers, mushroom and micro green growers, and ranchers along the Front Range are where our emphasis on locally sourced foods gets its start. Since we are aware that the quality of the ingredients determines the overall quality of a recipe, we make it a point to shop at local farmer's markets in order to obtain the highest quality ingredients possible. The preparation of our food, the preservation of our food, as well as the hiring and retention of our chefs and servers all incorporate sustainable practices. Because we use every part of an ingredient, even the parts that are typically thrown away, our stocks and starches have a more robust flavor than they would otherwise have. In our kitchen, we have shelves that are specifically designated for canning and fermentation. We also provide a living wage for our chefs and servers, and we promote their skills, in order to ensure that they are able to continue pursuing their passion for food without being overworked and underpaid for their efforts. We are able to create a truly personalized menu for our guests because we use food that is sourced locally and comes from farms that practice sustainable agriculture. We value the opportunity to engage in multiple conversations with our guests in order to assist them in the creation of a menu and occasion that will be truly unforgettable.
