The Pasta Bowl

It all began on a trip to the west coast around 20 years ago. Chris (the founder) discovered a really cool, laid-back restaurant with an open kitchen, delicious food, and genuine warmth. "Wow, this looks like a lot more fun than becoming a CPA," he thought to himself. In November of 1996, he returned home, resigned his work as a CPA, and launched the first PB. Lauro and Celso were two of the cooks he hired. Then one day, Jay stepped in and said, "Hello, I'm an opera singer, and I'd like to work here." (I'm not sure if he sang it, but it's possible...) So Chris thought to himself, "OK, what can you do?" "Well, I've never worked in a restaurant before," Jay explained, "but this seems like a decent place to start." "Cool, we'll work it out," Chris said. Everything was going swimmingly until the Landlord informed Chris that unless he leased the other available space in the building, his lease on the restaurant would be terminated. As a result, Chris decided to rent out the remaining space and create a bar. "Do we know how to run a bar?" Jay, Lauro, and Celso wondered. "We'll work it out," Chris replied. Taylor appeared about that time, having decided that it was time to quit bartending at the local Deadhead hangout and find a real job. "Can you run a bar?" Chris inquired. "I believe so," Taylor replied. "Cool, we'll work it out," they both said. We bought a bunch of catering trucks somewhere along the way, and now Jay's is in charge of our entire catering operation. Chris and Taylor are now business partners. Our second site launched in 2015, followed by our third in 2018. And Lauro and Celso (both still PB family members) are a significant reason why your Farfalle Pollo tastes exactly the same as it did 20 years ago. The nicest aspect of this whole narrative is that we've managed to gain enough support and loyalty from individuals like you to allow us to continue doing what we're doing instead of returning to dull occupations like CPAs or, even worse, chain restaurants. We are all eternally grateful for that!
