About Xim Catering
Savor. Ethos. Inspire. These three words encapsulate the feeling that we want to elicit with our food, as well as the connections that we have with the Mayan culture. Corn is what is meant when the word Xim is spoken in its original Mayan context. Agriculture was essential to Mayan civilization and constituted a significant part of the Mayan people's diet. The Mayans held "Hun-Ixim," the god of maize, in the highest regard. This god was depicted as a young man wearing a corn husk on his head. The cuisine that existed in Mexico prior to the arrival of the Spaniards featured corn as a significant component. With it, tortillas are made, and tortillas are also used to prepare delicious tacos, which have their roots in pre-Hispanic molli (mole) and were prepared on hot stones and garnished with cochineals and served with beans and peppers.
