Lettuce Entertain You Restaurants was founded on June 10, 1971, as a result of Rich Melman's original ideas and Jerry A. Orzoff's financial skills. Orzoff, a wealthy realtor, was a close friend and mentor to Melman throughout his life. Melman and Orzoff continued to develop restaurant concepts together after the establishment of R.J. Grunts in 1971 until Orzoff's death in 1981. Melman developed a concept focused on the value of cooperation, sharing responsibilities and ideas, evolving and growing together, with a "culture of care" mindset that has been vital to the company since day one, thanks to his friendship with Orzoff. Lettuce is still a family-owned business that owns, operates, and licenses more than 60 brands and 130 restaurants in a dozen states, including Illinois, Minnesota, Maryland, Nevada, Virginia, Washington, D.C., Texas, and Florida.
