Founded by Ed Kerwin under the motto "Head, Heart and Hands Together," the estate produces three distinct wine labels from grapes reflecting French, Italian, and Spanish winemaking traditions, including Pinot Noir, Cabernet Sauvignon, and estate-grown Italian varietals like Caprettone. Wines are fermented in a tank room visible from the Pavilion's viewing gallery and aged in barrel rooms resting beneath the Pavilion at a steady 56 degrees Fahrenheit.
