Matsuhisa Vail

Matsuhisa Vail opened in 2011 as Chef Nobu Matsuhisa's second Colorado restaurant, situated in the five-star Solaris development at the heart of Vail Village. The space pairs rustic and urban sensibilities: indigenous stone fireplaces, outdoor fire pits, large stone pillars, and custom woodwork share the room with floor-to-ceiling windows that frame a panoramic view of Vail Mountain. A seasonal outdoor patio extends the dining experience during warmer months. Chef Nobu's new-style Japanese cuisine draws from classical training in Tokyo and formative years cooking in Peru, Argentina, and beyond, arriving on the plate as something distinct — dishes like Black Cod Miso and Yellowtail Sashimi with Jalapeño have become signatures of that approach. For private gatherings, Matsuhisa Vail offers a dedicated large private dining room, several semi-private areas, and a seasonal mountain-view terrace, together accommodating seated groups from an intimate 14 to 75 and receptions up to 125. Full restaurant buyouts and off-site catering throughout Colorado are also available.
