    Novela is a literary-themed pub where traditional literary references appear in fresh and unexpected ways. Novela offers a fascinating and sophisticated environment that juxtaposes classic and contemporary design, from our chromatically classified book collection to the names of our house drinks, which are taken from characters in cherished literary works. The atmosphere is conducive to a variety of gatherings, ranging from boisterous after-work mixers to first dates and birthday parties. Seasonally changing drink and punch menus are masterfully designed by our professional bartenders. We collaborate to create a selection of innovative house cocktails and historically inspired punches-on-tap. Each of our house cocktails is made using components that aren't generally found in classic punches. Although it encompasses all of those things, the core notion that underpins our cooking is that food is a vehicle for the transmission of values, knowledge, and tradition. The methods in which we cook are influenced by the situation in which we find ourselves, both in terms of space and time. This helps us hold on to the knowledge of the past while leaving opportunity for development as our perspective of the world changes. On our menu, we emphasize using foods in the most unprocessed and natural state that we are able to locate them in. This almost often refers to seasonal produce, which, as a result, indicates that the foods in question are at their peak of quality and taste. The fact that we can eat properly because of the sacrifices made by those who raise local veggies and entire animals brings this home to us. When we carry out our work, we recognize the weight of that obligation, which we respect and carry with us. Cooking is a way for us to honor the people who provide us with nutrition, our heritage, and our craft, and most importantly, the food that we create. When you walk out of Birdsong, we want you to feel the same way that we do—a little more connected, a little lighter (in spirit), and a little more happy and delighted than when you went in.
