We believe great food is born from the best ingredients. The cooking process begins with many questions and informed decisions. Which farm? What are the farming practices? Which breed of animal? Where are the fish from and how were they caught and handled? Which variety of sea salt is best for each dish? What type of oil? Each dish should be healthy, appear simple and show respect for the ingredients. Regular menu items include oak smoked beef brisket, hickory smoked chicken, dry rub ribs done with apple and cherry wood & apple-hickory smoked pulled pork.
