MARKET RESTAURANT: Our first-floor restaurant offers a seasonal menu that changes daily and is prepared at eight specialized stations that combine traditional Chinese and Western culinary technology. A major dining space serves as the focal point, with handcrafted seats and tables made from reclaimed Chinese elm in China. These exhibition kitchens, which have plenty of bar seating, allow you to get a closer look at the skilled chefs at work. The wok station combines European and Chinese flair, with a state-of-the-art Hestan range on one side and an extensive custom-designed wok line by Joe Yick, a third-generation family business in San Francisco, on the other. The charcuterie station features a deep wood-fired oven, similar to a pizza oven in concept, but serving classic roast duck and chicken instead. DESIGN: A Chinese clay oven, similar to an Indian tandoor, is a three-foot tall receptacle resembling an enormous vase that sustains low heat over charcoal fire for an extended period of time, suitable for low and slow roasting pork. Dumplings, in particular, scream Chinese cuisine. This station, which serves as the restaurant's focal point, is equipped with enormous cast iron pans for cooking pot stickers and a variety of steamed and pan-fried dumplings.
