    Since New York State's mandatory closings began on March 15th, we've been taking advantage of the opportunity to engage in some serious introspection about our collective safety and our future. Perspective can be gained through the distance created by the pandemic and our separation from the familiar—work, friends, family, and social lives. We have decided to re-locate and transform Bouley at Home and Bouley Test Kitchen into a new concept due to the inherent difficulties of in-person dining in the face of the ongoing dangers of Covid-19. As we prepare to relocate from 31 West 21st Street to a new venue in Lower Manhattan's TriBeCa neighborhood (location to be determined), we are taking advantage of this rare opportunity to envision and plan what the new Bouley will look like. Bouley has been many things to many people over the course of my 35+ years in the business world. In order to achieve unbreakable health, our mission continues to be to create the most nutrient-dense menus possible while immersing guests in a community of shared culinary knowledge. Our international and discerning clientele has always pushed us to try new things and be more creative in our approach. Our reputation as a forum for high food standards has always compelled us to take on social responsibility, which has deepened our commitment to a variety of ways to inform people about how they can celebrate their culinary passions while also maintaining good health and wellness. We want to make available to you the high-quality ingredients sourced from our ardent organic farmers, to share the relationship we have with our fishermen and their values, and to share the people who raise our animals on organic diets in beautiful natural surroundings. As of right now, we continue to provide off-premises catering for private events and special occasions in homes as well as through our extensive network of partner locations.     SOHO Lofts has three unique film-friendly open lofts located in the heart of Manhattan's intimate SOHO district. These spaces are available for video, photo productions, corporate special events, and product launches. Three lofts which consist of ground floor / retail location, and attached basement, and a second floor. All these spaces could be either rented separately or combined. Privately owned, one-of-a-kind commercial loft spaces are available for rental on a daily or short-term basis. In the heart of Manhattan's SOHO district, this hotel is ideally situated. Product launches, exhibition spaces, fashion shows, film and television productions, and photo shoots are some of the most common uses for this type of space. The lofts have a total floor area of 30,000 square feet that can be customized to suit your needs. There are currently three lofts available: one on the ground floor, one on the lower level, and one on the second floor. There are also upper built-out floors available on the property as an option. This cast iron building, built in 1890 in a bustling area of Manhattan, was occupied by a famous textile manufacturing company at the time of its construction. Many of the original details can still be found in the lofts. Each loft is 10,000 square feet (50 x 200), and they are located on a stretch of Broadway between Mercer and Broadway streets. Natural light floods in through 15-foot-high sash windows that look out onto Mercer and Broadway. They also have an elevator.     We found a perfect cozy space at the end of an unused alley off the Bowery in the fall of 2004, and Freemans Restaurant was born. The restaurant's concept was to create a rough, secretive colonial American tavern. Early Americans imagined the cuisine to be simple, rustic, and inspired by Old World traditions. We've held everything from weddings and birthday parties to movie premieres, luncheons, wrap parties, bridal showers, and business dinners over the years. For seated dinner parties or cocktail celebrations, Freemans has three private rooms available. The entire second floor, including the drawing room, or the entire restaurant, can be rented for groups of 30 to 200 people. Our intimate working wine cellar provides an exceptional eating environment. In your own private wine cellar, seats 10-12 guests for a sit-down lunch or dinner. In an elegant 2nd floor dining room, the Blue Room seats 13-20 guests for a sit-down lunch or dinner, or up to 30 guests for a cocktail reception. Our largest single private room is the Red Room on the second floor.     David Bouley was born and reared in the Connecticut town of Storrs. David's childhood spent on his grandparents' farm had a profound influence on him. Inspired by their French ancestors, he acquired a passion for preparing nutritious meals from scratch using well selected, freshly prepared components. David began working in restaurants at a young age, and has since lived on Cape Cod, in Sante Fe, and in France and Switzerland, among other places. His experience working with some of Europe's most recognized chefs, such as Roger Vergé, Paul Bocuse, Joel Robuchon, Gaston Lenôtre and Frédy Giradet, followed his studies at the Sorbonne University. After gaining valuable expertise, David went on to work in some of New York's most prestigious restaurants at the time, including Le Cirque, Le Périgord, and La Côte Basque, among others. He also worked as a sous chef in a San Francisco restaurant owned by Roger Vergé for a short period of time. David went on to become the chef of the Montrachet restaurant in TriBeCa when it first opened its doors in 1985. The New York Times published a three-star review of the restaurant shortly after it opened, attracting widespread notice. Private Dining Events and Catering provide us with opportunity to collaborate more intimately with our guests, as well as possibilities to share our passion for celebration in innovative and exciting new ways. As a result, when people taste the food that we have prepared, they can tell that it has been prepared with a lot of love. This is also reflected in the way we conduct our catering and private dining operations.
