The art of Washoku centers on a set of guiding principles that emphasize harmony in color, sense of smell and taste, and respect for the ingredients used in food preparation.     OUR STORY: Del Popolo began operations as a mobile pizzeria in May 2012, operating out of a glass-enclosed shipping container on the back of a Freightliner truck and serving Neapolitan-inspired pizza. In November 2015, we inaugurated our brick-and-mortar restaurant, which serves the same naturally-leavened, wood-fired pizza that we have been obsessing over since 2012, as well as market-driven antipasti and a carefully curated list of wine and beer selections.
