After Katrina, what had once been a sleepy little wine shop on the outskirts of New Orleans transformed into an eclectic Bywater hangout and then into an important part of the city's recovery as visiting chefs from other parts of the city prepared food for the crowds at Bacchanal Sundays, the city's first pop-up. A new business model—a speakeasy that offered fantastic food and music in a garden party seven nights a week—emerged from this legendary day, which was later memorialized in HBO's series Treme. Bacchanal was eventually raided by the city on a busy Friday night in the Summer because we lacked the authorization or permits to operate as an outdoor cuisine and jazz club seven nights a week. After a protracted battle over a year that started with a raid, we eventually prevailed in City Hall with the support of the Bywater community and citizens all across NOLA.
