Birch Bakery is a small-batch bakery specializing in baked products, specialty cakes, and sweets made entirely from scratch. Our goal is to give the greatest product possible by sourcing the freshest, organic, and locally sourced ingredients wherever feasible. At Birch Bakery, we strive to create personalized cakes and sweet delights that are one-of-a-kind, gorgeous, and incredibly tasty. From start to finish, every small element of every order is given special attention. When possible, we use only the finest and freshest ingredients, including all organic dairy and locally sourced products. Whether it's an artistically decorated wedding cake, a lovely and colorful kid's birthday cake, or simply some great baked products or sweets, we love being a part of our clients' occasions. Laura Springfield, the chef and owner, received a diploma with honors from The French Pastry School in Chicago, where she studied under Sebastien Canonne, M.O.F., and Jacquy Pfeiffer, both recipients of the French Legion of Honour Award. Laura also has a Bachelor of Science in Business Administration from DePaul University. Laura worked as the Head Decorator at Amy Beck Cake Design in Chicago after graduation, and then at Marilyn's Bakery as the Head Decorator and Manager. Owning her own shop has always been a goal of hers, dating back to summers spent at Birch Lake in Michigan with her grandmother learning to bake. Laura established Birch Bakery in 2019 after taking a couple of years off to be with her baby and relocate to Seattle.
