Butterfield, named for the town's original area telephone exchange, began as a humble home delivery service for prominent families such as the Astors and the Rockefellers. When Teddy "Mr. Butterfield" Appelbaum began knocking on our neighbors' doors, we began to uncover the ties that bind us together as a community and help us become who we are today. Our dedication to providing delicious food made with the freshest ingredients has allowed our original Upper East Side storefront to expand into Butterfield Market, Catering, Gifts, and Cafes, which opened just two generations later.. We are a family business in every sense of the word, and we believe in providing warm, friendly service, paying close attention to detail, and, above all, providing a delicious meal. Chef Jorge Flores approaches food and cooking with a positive attitude, seeking to bring joy to his customers. Beginning at a young age, he was immersed in a kitchen culture that emphasized tradition while drawing inspiration from fresh, seasonal ingredients. The discovery of his own culinary curiosity took him by surprise, and it led him straight into the kitchens of New York City, where he learned and refined his skills solely through hands-on experience. As he might say, "Do something well, or don't do it at all." He continues to be motivated by this same approach of precision and perfection, while never losing sight of the importance of believing in the magic of good ingredients and a good recipe. For Chef Jorge, food is an adventure and a labor of love, and his philosophy can be tasted in every bite of his creations.
