About The Hindquarter
Are you looking for customized meals made with local fruit and meat? Each cuisine at The Hindquarter is tailored to the client's preferences and the season's offerings. All of our cuisine is cooked over an open flame at The Hindquarter, which is fueled by hardwoods from our acreage in Huntington, VT. Mark Shattuck, a local welder, has created special Argentinian-style grills for us. This method is unique to our firm and allows diners to observe their dish being prepared right in front of their eyes. When it comes to preparing an event, we recommend that our clients select food that utilizes all of our grills. We sear on our chapas, bake in the infiernillo, grill on the ring of fire over low embers, and roast on our skewers and swords. There are a few things to consider while creating a basic menu structure: Cocktail Hour: Would you prefer passing hors d'oeuvres, a stationary table where your guests can graze, or a mix of the two? Courses: Would you prefer a first course or to have everything served at once? Do you want your meal to be served as a buffet, family style, or with each course individually plated? Will you serve a traditional wedding cake, a variety of smaller desserts, or a combination of the two for dessert? We do not offer wedding cakes at the Hindquarter, but we can make smaller treats.
