Founded in 2024
Twist is run by Michelin starred Chefs who bring the creativity and hospitality of a fine dining restaurant to your home or event. Our goal is to create unique dishes, menus, and experiences for all events from an elaborate wedding to a backyard gathering. Chefs Michael Balboni and Vincent Cortese met as cooks at world renowned Restaurant Daniel. Vincent went on to be the Chef de Cuisine at Michelin starred Del Posto, Executive Chef at Bar Boulud and Bar 56. Michael worked for Daniel Boulud for the next 12 years as Executive Chef at DB Bistro Moderne and the opening Executive Chef at the Michelin starred Le Pavillon. When the two came back together their goal was to bring their knowledge, skill, and creativity to events and gatherings through the tri-state area.

- What makes your catering style unique?
- Our chefs have a combined 35 years in fine dining and Michelin rated restaurants in NYC specializing in Italian and French cuisines. We love cooking classic European and American dishes with our own special Twist.
- Do you offer catering options to accommodate special dietary needs?
- We are happy to accommodate any and all dietary restrictions. We take pride in our ability make dishes that are just as interesting and beautiful, whether they are gluten free, dairy free or vegan.
- Do you offer tastings, and when would my tasting take place?
- Yes, for all events over 10k we offer free tastings.
- How many staff members will be present on the day of my event?
- Depending on the event it could be anywhere from 1 chef to a team of 20 depending on what kind of service you want and the amount of guests.
- Do you specialize in certain types of cuisine?
- We specialize in Italian and French. But have vast experience in cuisines from all around the world.
Meet The Team

Vincent Cortese
Chef/OwnerVincent Cortese is the Chef and Co-Owner of Twist Catering. Vincent began his career under Chef Daniel Boulud at the acclaimed Restaurant DANIEL, where he honed his French technique and found a love for disciplined, high-level cooking. He later served as Chef de Cuisine at Del Posto, developing a deep passion for Italian cuisine. He went on to become Executive Chef at Bar Boulud, and more recently, was the founding Executive Chef of bar56 in DUMBO.
