Monika arrived in the United States in 1994 and began working as the Catering Director at The Downtown Athletic Club in New York City. Brian Pancir received classical training at the prestigious Le Cordon Bleu in Paris. He worked as an apprentice in Michelin-starred restaurants throughout Europe before becoming Sous Chef at Jean-Georges for four years in New York City.
