Perspective can be gained through the distance created by the pandemic and our separation from the familiar—work, friends, family, and social lives. We have decided to re-locate and transform Bouley at Home and Bouley Test Kitchen into a new concept due to the inherent difficulties of in-person dining in the face of the ongoing dangers of Covid-19. As we prepare to relocate from 31 West 21st Street to a new venue in Lower Manhattan's TriBeCa neighborhood (location to be determined), we are taking advantage of this rare opportunity to envision and plan what the new Bouley will look like. Bouley has been many things to many people over the course of my 35+ years in the business world. In order to achieve unbreakable health, our mission continues to be to create the most nutrient-dense menus possible while immersing guests in a community of shared culinary knowledge. Our international and discerning clientele has always pushed us to try new things and be more creative in our approach. The kitchen maintains strict standards in beef preparation: USDA Prime cuts are dry-aged and hand-butchered in-house in a dedicated aging facility held at 36 degrees Fahrenheit for approximately four weeks, with between 7 and 12 tons of beef aging at any given time. For private events, the second floor offers four skylit rooms — the American Room, Brandy Room, Club Room, and Derby Room — accommodating groups from 20 to 130 seated guests.
