The Faurschou Foundation was established in 2011 by Mr. Faurschou after decades as gallery owner focusing on international contemporary art. Faurschou New York and Chef Refslund represent a perfect partnership, as they compliment each other’s stunning collections of inspirations. Terroir represents the sum of natural forces: soil condition, sun, wind, and rain. When we eat food that expresses terroir, we feel connected to a particular area of land and sea, and its unique characteristics, and by extension, to the people that live there, their struggles and sensibilities. Amidst the cozy, intimate, moodily-lit “Tudor Hacienda” décor, Chef de Cuisine Victor Santibanez (in collaboration with Executive Chef Brad Warner) has crafted an upscale Mexican menu designed for sharing with small plates such as fresh ceviches, tacos and salads, as well as more generously proportioned dishes like Roasted Chile Rellano, Lamb Barbacoa Tacos and Carne Asade.
