Our Philosophy Cider is finally reclaiming its rightful place as America's table drink, a position it had during Colonial times and for much of the nineteenth century to the present. The different schools of thought about cider are evident today, particularly in Virginia where we obtain our apples and produce our cider: from the traditional farm cideries where classic cider apples are pressed and the juice fully fermented with only yeast added, to the cutting edge cider makers who are influenced by the craft beer movement and infuse their ciders with a riotous blend of new and historic natural flavors. Our Ciders are made in small batches. When it comes to our Cidery, Mount Defiance is extremely proud to offer both classic and craft ciders. In addition to traditional farmhouse blends of dry cider and single variety cider, we enjoy infusing fresh ginger for a seriously ginger-flavored cider, as well as a full spectrum of infused and co-fermented ciders ranging from honey (cyser) to blueberries to our five pepper cider, which is designed to withstand barbecues. The Harry and Jeanette Weinberg Environmental Education Building anchors the campus and includes exhibit spaces home to live animal ambassadors. The property offers more than 600 feet of shoreline, 180-degree river views, and a 130-foot lighted pier extending over the water — a combination that gives it a rare sense of natural privacy without sacrificing accessibility for out-of-town guests. The centerpiece of the property is a timber frame pavilion built with a contemporary country aesthetic and nautical touches. Douglas fir posts and beams define the interior, while a glass wall facing the river and 12 glass doors that open onto the lawn and beach keep the connection to the water immediate. A 40-foot masonry fireplace anchors one end of the main floor, and a full bar with granite, copper, and antique mirror finishes runs along the opposite wall. Founded in 1983 by journalist and conservationist Arthur "Nick" Arundel, the property was transformed from an abandoned farm into permanent green space and placed under a conservation easement with the backing of 100 Founding Life Members. Today the Great Meadow Foundation, a 501(c)(3) nonprofit, operates the grounds as an outdoor events center, hosting equestrian competitions, festivals, community gatherings, and weddings across its rolling hills and open meadows. Couples can choose separate on-site locations for ceremony and reception and bring in their own vendors, with tented receptions set beneath open sky. The renovation of the building proceeded as planned, with funds raised through private contributions solicited by the committee's members. Upon completion, an item titled "Upperville's Latest Community Project is Brought to a Close" ran in the Fauquier Times-Democrat on November 5, 1942, with the headline "Upperville's Latest Community Project is Brought to a Close." According to the report, "the building will be available for use by churches, humanitarian organizations, the Red Cross, and the Boy Scouts at no cost." For dances and private gatherings, there will be a little cost levied. Additionally, in the event that Washington is evacuated, the hall will be required for hospital or canteen operations."
